Named after the city in Switzerland where it was originally made, Gruyere is a semi-hard cheese with a nutty flavor, perfect to pair with a pinot noir. As it ages, the flavor increases in complexity and gains an earthier taste. Aasgard is aged for at least two months, and as many as six.
